You want RAW for s/pdif output. Most players use the term 'bitstream' but it means the same thing. It means the dvd player should not decode the bits - just send them out the digital output. If you set it to PCM, the player will do the decoding and send the output to the analog outs.
The LPCM setting you describe determines the sampling rate it uses when outputting digital signals. If your receiver has 96 kHz or greater capable dacs, set it to 96 kHz. If you set it to 48 kHz but then play something that is at 96 kHz, the player will downsample to the lower rate.
I would expect more than just the downsampling option for the LPCM setting. On my (Onkyo) player, the LPCM option has two choices: PCM and OFF. When on PCM, it uses the digital out and when OFF it uses the analog outs. That affects LPCM signals, such as from a CD.
You will have to setup the Marantz to assign the digital inputs. If you have the manual it will be listed as 'digital input assignment' or something along those lines.
