There really isn't a "good" level. It depends on your speaker's sensitivity and how far you sit so the levels can vary. In my room (which is large), at the distance I sit with my current speakers (14.5 feet or 4.4 m), my trim is -1.5 for my mains. When I had the Ultras it was +1.5 because they're not as sensitive. +7 or +8 seems to me (and Mark) is running them pretty hot.
If you haven't run setup at all then all bets are off. I think some units won't work at all right out of the box without running setup, and if you did it for another room before this new one it won't be right either so it's pretty hard to troubleshoot at this point. I know that Audyssey (assuming the same for YPAO) does a very good job with distances and trim levels, even if you don't like the eq'ing, which you can bypass and keep the distance settings.
