It may well be the Firestick, but not because it is a hunt and peck device. Most apps are optimized for streaming devices such as the Firestick. Things get complicated when connecting to, not one, but two other devices with lower video specs.
Just what is a hunt and peck device, tho?

It refers to streamers with no keyboard. So, one has to hunt and peck for letters when typing with the remote controller.

Ah. I don't use the keyboard much, but they are pretty limited.....but you can talk to 'em if you want and avoid the keyboard, too.

Fire TV settings differ a bit using Stick vs Cube, but check your settings and disable HDR if there is a setting for it. HDR can be output using 1080p but you want it OFF here. Just have to try and select the correct combination of settings for audio and video to be out correctly using this combination of devices.
There is only one display setting for fire stick tv which is Auto or you can pick the various resolution like 1080P etc no specific HDR on/off setting I have seen.

HDR settings would be in the Dynamic Range section of display settings. I'm sure it is disabled as a result of the current connections. Check info of connections by going to Settings>Display & Sounds>Select Audio and Video Diagnostics. What are the audio and video capabilities detected by the Firestick concerning the TV and receiver?

So I guess i give up. One update I want to provide is I also have the previous version of Fire TV Stick 4K Max (wifi 6) and I have the same issue no sound only display. So I guess its the fire stick and sc-71 which dont like each other.

The receiver and projector do not support HDMI 2.0a or HDCP 2.2/3 like the 4K Max. They are HDMI 1.4 and likely HDCP 1.4. There will be issues. Newer receivers can switch the HDMI spec of individual HDMI ports and also turn off certain features of individual ports for compatibility with older spec devices. It’s a different can of worms when connecting some new devices to older spec receivers and TV/Projectors.

Try to adjust all of the Display Settings in the 4K MAX to see if you can crack the code for getting an audio signal with the projector ON. Set the video resolution 1080p 60Hz. That should gray out Match Original Frame Rate and it should be OFF. Set the Color Depth to 8 bits and Color Format to YCbCr. Dynamic Range Settings should be set to Disable HDR. Finally, the Game Mode/ALLM setting should be turned OFF.

I can’t think of any other video settings to tinker with here. I did notice in the receiver pics that A and B speakers were ON. Turn B OFF if not using another set of speakers. Should the sound start working, press the Auto/ALC/Direct button on the remote controller until Auto Surround displays on the front panel to automatically select the optimal decoder for the incoming signal. I noticed EXT. STEREO was selected as the sound mode. You might try switching the Sound Output setting in the 4K MAX from Best Available to Dolby Digital Plus to see if that helps at all.
