Us and them
I'd have to pick Pink Floyd's "Us and them". It puts a traditional instrument in a layered Synth/Rock environment and the non-electric nature of the instrument really comes through. It's a great contrast and it really shows off the complexity of the sax's tone and range. It also shows that the "real" instrument can hold it's own against the electronics in some of the more powerful passages--It shows a great deal of range from soft to powerful. I have the SACD version of DSOTM and the Sax really shines.
