Any knife nuts here?

I not nuts on pocket or hunting knifes, but kitchen knifes is a different story.
I'd love to have full wustoff set, but for I get by with higher end ikea blades.

I'm a bit of a kitchen nut. I've taken a lot of classes and done ameteur iron chef kinda things and have been a guest chef along with our master chef over at our country club.

I have two complete sets of Wusthof knives... I have the original Grand Prix's since they fit my larger hands better than the classics. The Ikons are really nice too but I can't justify another set when the ones I got are perfect.

With proper care, these knives will last a lifetime. There are a lot of knives out there... certainly some that are superior to Wusthof, but overall, I think you get a great knife for the money. A lot of guys in my BBQ group like Victorinox knives by Swiss Army and absolutely swear by them. They are a great value.

For tactical/survival knives, I have SOG Seal Pup Elite and a Rat Cutlery RC-5 (I think) ... note that Rat is now ESEE if you want to check them out. These are probably some of the best knives out there. A bit pricey, but a lot of the military guys in the middle east swear by them based on the comments I read from them on some of the other groups I belong to.

Still, I think my Seal Pup is a great knife and I paid about $80 for it. Great knife. I also got a couple of magnesium stones.

I Love my kitchen knives, got a great set of Shun, they hold up really well and keep a super sharp edge for a long time..

Shun's are definitely cool. Just a tad pricey for me. I buy the Calphalon Katana knock-offs especially since there is a Calphalon outlet just down the street and when they're having a sale you can get knives for about $30

Those look really nice - handles look great as well... probably the biggest drawback on most professional quality knives...

One thing I never liked was those wood block with the vertical inserts - constantly dulls the knives on the old In Out - In Out :rolleyes:

I prefer the horizontal layout - but these magnetics look slick as well...



Another huge gripe of mine is knife sets that have steak knives with serrated edges on them - WTF I keep my knives razor sharp and don't need a saw integrated in them for cutting flesh - really...... come on...

Yeah, I've got my Katana's hanging on a magnetic strip on the wall in the kitchen.

Right after I got my cleaver I had just finished washing it and was flinging the water off it into the sink and I smacked it on the faucet. Put a nice little chip in the tip. I took it to a local knife sharpener and had him take the nick out but now the blade has little scratches where he re-sharpened it. Lame. :mad:

I think you should buy a driver motor from TC Sounds and just plop it on the counter top....I think those magnets should be strong enough to hold a few knives! :)

Ha - funny you mention cleaver....

I think that honestly is my most used and favorite tool in the whole kitchen - I have a nice pair of them and wouldn't trade them for anything...

GlocksRock, getting decent kitchen cutlery doesn't have to be expensive.

These are not equivalent to wustoff quality, but they are 90% there at 1/2 to 1/3 of the price.

You must use diamond based sharpening on these - 600 to 800 grid.

Handwash and wall mounted magnetic strip (also sold in Ikea) is the way to go.

... you're going to need a couple of swords with that too. I think my set of Hinkels was on sale at Macy's from like $250 to ~ $140. I take that grooved steel thing to them whenever they don't cut tomatoes nicely and I'm back in the game in like 30 seconds. The two blades that really count are the butcher knife and the pointy one of the same size that's good for carving turkeys or cutting up a chicken. The rest is nice to have as matched steak knives, a couple other small knives and scissors. You can see the handles in this pic. I'm too lazy to take a better pic of just the knives.

Machete is definitely my favorite, but it's not street legal. I lose pocket knives so I quit carrying them. My tool of choice is the original Swiss Army knife.

For the kitchen we have Cutco which was a gift from my parents. Those things are amazing.

I have a set of Wustoff Classics that I bought in Germany 14 years ago. They keep a great edge. Love 'em! I expect to put them in my will for my daughter - that's how well they are holding up with use every day.

I was into "Rambo" - type knives when I was younger - then I grew up.;)

My everyday carry is a Kershaw Onion Blur with a smooth blade and I love it. It's the fastest assisted opening knife that I've ever owned. My dress clothes knife is a Kershaw Scallion with a Damascus steel blade. But being a knife nut I just had to buy a Ka-Bar Becker BK9 Combat Bowie for my bug out bag. Huge but surprisingly light and sharp enough to shave with. The perfect survival knife. Note the sheath in the Amazon photo is incorrect - it's nylon not kydex.
So, what do you keep under your pillow?:D

I have a Kapoosh knife block, so it will accomodate pretty much whatever kind of knife, so I can piece together whatever I want and don't have to worry about having a block that fits it.

I've been wanting to upgrade from my Chicago Cultery set for a long time. I really want to get a full set of Kyocera ceramic knives. I love the Kyocera Damascus series:

Yep, all the time. I've dropped my pocket knife more time than I can remember. The only time I ever damaged the edge was when I was cutting open a water heater box and accidently hit the metal strap. It chipped the blade. What a biotch to get a nick out of a ceramic blade with a diamond hone :mad:

I did break one of my EOD blades from when I was carrying it in my back pocket and sat on it. The sheath slipped off and broke the blade clean off at the hilt.

But let's fae it, if you have a problem dropping kitchen knives on the floor, you are a danger to society and don't deserve quality blades.
