5.1 channel outputs

I have 5.1 channel output on the back of my dvd player. I also have the corresponding inputs on my receiver. Are these used only for DVD-AUDIO,SACD only--or am I missing something to enhance the audio on my dvd movie playback?

If you are talking about the 5.1 analog audio outs, then it can be used for both, DD, DVD-A, and SACD analog. The DVD will decode the DD track.
Or, you could add coax cable, use the digital audio out and have your receiver decode the DD/DTS, if the receiver is capable.

You can decode everything at the player, if you desire. DVD movies and CDs included.

What is your player and what are it's bass management capabilities? What is your receiver and what are it's bass management capabilities?

You are correct, unless you play DVD-AUDIO, SACD don't bother. The only things missing using the five cables are poorer bass management and lots more cables. It's a no brainier IMO.

I like to use them if the DVD player has better DAC (Digital to Analog Converters) than the receiver. If your receiver does a better job with the conversion then I would run optical to the receiver from the DVD player. There other option are as mentioned above if you need them for DVD-A or SACD.
