While I don't doubt that you can build a PC in an hour, I wonder what that time investment is when you add up all the online research on what parts to buy?

Well, building a PC, like you eluded to, is a hobby.
So like all hobbies, of course, it's going to consume time. But if you like it, then it's time well spent.
When you can "create" your own computer, you get this feeling of "gratification".
It's like, "Yes, I built this thing!"
But like you said, it's a hobby and it's not for everyone.
But when I think about it, it's amazing how much we all "depend" on computers these days!
And since computers is such a huge part of life, I think building a PC is a hobby well-spent.
