First, I feel a bit stupid even having to post this ....
I love audio and set up a small recording station at home, and used to be able to take any electronic
and hook it all up and make it work.

With all the technological advancements I almost feel limited and as if things arent as universal.

Not even sure if this is the right topic to post under .....
As it involves TV, Receiver, game console, DVD ....

Here it goes ....

What I have :

Sony Bravia TV
Sony DVD Player
Sony Receiver
Sony PS2
Nintendo Wii

What I'm trying to accomplish :
All video to TV
All sound (including TV) through surround system

Issue's
Receiver has no HDMI or USB
TV audio out .....says to use the 3.5mm headphone jack (????)

PS2, DVD, Wii can all be RCA connected to the receiver
but um ... how do I output that to the TV when I have no RCA IN on the TV

I'm sure I've over engineered it and am missing something simple ...

Can anyone help me piece this together ??
I've posted pics of the back of dvd, tv, and receiver (thanks tiny pic as one image is upside down)

You would solve every issue simply by spending the money on a new audio video receiver with HDMI inputs and outputs. How much you spend depends upon your budget, the speaker array and the future compatibility level you may opt to have.

How many speakers will you be using?

The TV has a Digital Optical output and if you plan to keep the PS2, Wii, DVD and everything else close to the TV, feed the TV, then send the digital audio to the better of the two receivers- you don't need both. You'll need three fairly short HDMI cables and one optical connector, assuming the receiver has an optical input. If you care much about the surround working correctly with newer videos, your receivers will need to go- they're very out of date but if money is tight, you can use DTS or ProLogic to come close until you can justify buying a new AV receiver. Does the smaller Sony have the DVD built in? If so, just use the HDMI and don't connect anything else- you'll be using that purely as the DVD source.

You don't need expensive HDMI cables, but get something that's rated for High Speed ($10 for a 6' should work) and don't buy the cables that someone seems too eager to sell. The optical link should be less than $10 (the jack on the TV is near the ethernet port).
