My Sony TV (KP51WS500) has a DVI input. Can I attach an up-converting DVD player that has HDMI output with an HDMI to DVI cable & get 1080i?

Yes

my situation is the exact opposite. Dvi from dvd player(oppo 971) to hdmi in tv. The video signal is 100% digital the only difference is you'll need a audio cable. Lastly set the signal on your dvd to the native resolution of the tv, for best P/Q.

I went from a 5 year old Pioneer dvd player with component connection to a $80 Philips upconvert dvd player using hdmi/dvd player to dvi/tv cable.
Big difference. PQ was dramatically improved. I have the setting at 1080i and color saturation and sharpness is much better. I use digital coax for audio.
No problems at all.
The Philips is a decent player and for $80 it will do until I pull the trigger for the next generation of HD dvd players in another year or so.
