How much of a real world difference is there in cheap speaker wire you get a Radio Shack with the 2 bare wires vs. the expensive speaker wire that has plugs? My wire only needs to be 5-6 feet.

The important parameter is the thickness of the cable (i.e. gauge). At 5-6 feet, assuming nominal speaker impedance of 8 ohms, you'll be fine with some pretty small wire.

I've found the information at this link to be quite helpful.

You don't need to spend a lot of money. The Radio Shack stuff will work just fine.
