i feel like ive been making a lot of "...patio..." threads lately... lol

anyhow.. the whole 2nd zone thing is all new to me, ive succsefully set it up and love it and the flexability it offers. (it still BLOWS my mind that with one reciever i can watch a 5.1 movie in the living room, listen to satalite radio on the patio, and posible do a 3rd zone)

anyhow, what are my options as far as zone 2 control go? ir -> rf ? ir extender? second remote? maybe a really stripped down remote that only has buttons for source and volume? maybe a hardwired rheostat?

If all you want to do is volume, then you can add a control inline with the speakers outside. If you want to do more (source selection, tuning, etc.), then an IR extender would likely be the best bet.

Seriously, I have no life.
RTI makes a waterproof remote and havae for about 6 years but I don't know who sells them. For any system that you can't see, use RF- it's a lot more reliable. If you want to make setup of the second zones easier and more fault tolerant, use a separate AV receiver if you want to use digital audio inputs (most stereo receivers don't have optical or digital coax inputs). That way, you can use the tuner outside when the main one is using the tuner inside. If you want to listen to XM/Sirius, get a deceiver that has an XM input. This way, the two systems are controlled separately, although they can share the sources if you want.
