I have been messing with the crossovers of my speakers and was just wondering if I have them set to optimal levels. I have definitive pro center 1000 (cross = 120hz), pro sub 1000 (cross = 100), and sm55 Bookshelfs (cross = 60hz). Thanks for any help!

I'd raise the sm55 to 80 or 90 at least. I wouldnt push them down to a 60hz crossover.

pro sub 1000 (cross = 100),
Do you mean low pass filter at 100hz? The sub shouldnt really need to have a crossover set in the reciever. The low pass filter needs to be higher (default usually at 120hz) so you dont loose the 100 to 120hz range from the center crossover.
