The choices are as follows:

Denon AVR-3806
Denon AVR-2807
Pioneer VSX-74TXVI

Room is good size 25L x 17W x 8H
Mainly for home theater use. Still deciding on the projector but will
have HDMI

Speakers: Vienna Acoustics Bach Grand (4ohm)

Max $1000

One thing to remember.A 4 ohm load is real tough on most receivers.

Are those 4 OHM speakers all the way around? Most receivers are rated for a max of 2 4OHM speakers (front mains). I don't think there are many models out their, especially in that price range, that can handle more than 2 4OHM speakers. It could cause the receiver to shut down or the speakers to simply not live up to their full potential due to lack of power.

A seperate amp may be in your future.

The good news is that I haven't bought the speakers yet! They are all rated at 4 ohms. As much as I like these speakers, I will probably look
at something else, since I don't really want to go with a seperate amp!
I guess I could go with their mains but I would like them all to match.
Maybe DefTec, Revel or Aperion. Thanks

don't skimp on speakers!!! speakers make the most difference in sound quality of a system...obviously electronics are important and have different sounds, but the quality of the transducers of the signal is your biggest concern (IMO). This being said, get a processor or receiver and use it as a pre-pro, and hook it up to some nice external amps (Outlaw, as above, is a great solution...although more power for less $$$ is easy if you shop around). Those 4-ohm speakers will sound MUCH better with proper power, and your system will thank you in the long term because of how you'll be spreading out the load. Good luck...

You don't have to pay a lot for seperate amps. Pro amps from Behringer, Crown, Carvin, and QSC are some of the best deals around. There are multi-channel pro amps as well that cost much less than "home theater" amps and perform just as well.
 
That AVR-3806 would probabaly do fine as a starter and if you needed to add an additional amp later you could. Denon seems to underspec their amps. Also nets you HDMI switching and upconversion which is nice to have.
