HDMI-ARC or digital optical?

Currently trying to connect my TV to my 7.1 surround system. My projector is temporarily out of commission so i wanted to put the TV screen in place of the projector screen.

At first the audio only played out of the tv speakers so i connected HDMI to the ARC enabled port, turned on HDMI-CEC on both receiver and tv and the audio was playing out of the speakers but only L and R channels. None of my toying with settings on the tv, receiver, or xbox had any change.

I assumed ARC returned the audio to the receiver in stereo format because that's what a tv default is. I am an AV noob so im not sure if thats the case but any information on that is helpful.

I have also read up on digital optical cable and was wondering if that would solve my problem (send only the video to the tv and let the receiver handle the audio)

Many tvs only provide 2.0 output via ARC, like mine, altho perhaps multi-ch for OTA (over the air) content, what set do you have? Usually same output via optical as ARC....
