Chuck roast is my go to cut for stews. Usually just enough marbling to give you some flavor but still lean enough so you're not adding a ton of fat. If fat is a concern then any knd of round cut (bottom round roast, eye of round or even London broil) will be the leanest.
What's wrong with good animal fat? It won't get you any fatter, as a matter of fact, you can lose fat by eating fat. It's the carbohydrates that get people to get fat.

I never said animal fat is bad. Some folks do tho. Hell, some think red meat is bad, and there are those who think any meat period is bad.

Me? I'm a meat eater and prefer chuck over round because I think a little fat = more flavor.
