I hear so many varying opinions , I have ran the odyssey set up several times and it keeps recommending a crossover of 40 Hz for my ascend acoustics CMT-340 SE fronts & 60 Hz for my CBM-170 SE surrounds, this seems a little off to me but I really want to get my system sounding correctly

You may have your speakers set to large. Check that.

The auto calibration can often give you lower frequency suggestions than is optimal. Think of them as picking the lowest setting your speaker can support but maybe not the best sounding overall. Should be fine bumping them up 20hz or setting them all to 80 hz.

If your sub setup is good then raising the frequency higher may help move power hungry low frequency load to the sub which is better able to handle it and means your speakers will have more power and clarity at the higher frequencies. But don't set your crossover high enough that you can localise the bass as coming from your sub. 80hz is the gold standard for crossover point as it is very hard for anyone to localise 80hz and below but much higher than this some people can.

That has been my experience as well. Just because your speakers can do it, doesn't mean it's the best thing to do. Wait! Oh crap... I'm starting to sound like my mother.
