My Oknyo reciever(HTR340) does not have HDMI. If I were to hook up my DVD player(Sony upscaling DVP-NS75H) via HDMI to the TV would I still be able to run the sound through the reciever via optical/coax? Or would I be stuck with sound through TV. Not sure what other info I need to give to help with answers.

Sometimes Its one or the other. As in HDMI or digital connections so you'll have to see if your player supports doing both. Only one way to find out. Try it. But if your dvd player does allow it then no problem ;)

right, i was refering to this sony.

I dont have the same exact gear as you, but I'm running HDMI from DVD-->TV, and component audio from DVD-->Receiver, and this works.

I just upgraded to an Onkyo 605 receiver, which has HDMI inputs, but I've yet to hook it up...

Yea I did the same thing with my sound bar both HDMI video connects to the TV from DVD & SAT plus analog, then optical from DVD & SAT to sound bar it works great, and my wife doesn't have to turn on the sound bar to watch or listen to either.
