Ceiling mount AND wall mount options ? help needed

Hi all. I'm looking at putting in wall and ceiling mount speakers in our house and would really appreciate some help/thoughts and even opinions!. Running cables and the like is no issue, i'm going to have to step up the size due to the length of some of the runs.
I'm just wondering about my options with speakers. Our place is in the shape of an L with the end of the shorter stem the lounge/entertaining room, the kitchen and dining are one big room in the corner.Then there is a hallway up to the bedrooms bathroom etc the longer stem.

Now I want to put one massive system in, but with the option of switching different parts of the house off. I don't even mind if I do that simply by using a switch panel and physically turning off the rest of the house when watching movies or whatever as I am sure I can get some pretty nice looking switches that will do the job fine. I'm not sure whether many amps give those options or how much it will cost for them. At the end of the day, the speakers will stay with the house, so a switchplate might be the go.

So now, as for the speakers: I don't know much, i'll put that out there first. I've done a little reading, niles, klipsch, jamo all pop up a lot. Bose (the first thought) seems to get shot down a lot so i'll leave that alone.

I'd like to spend 'around' $500 a pair maximum(ish) unless that little extra cash means a lot of extra quality. I realise i'm looking at spending quite a bit but the amount of time spent with music playing is well worth it I guess.

I want to put wall mount speakers (or ceiling mount if it will have a more agreeable sound) in my lounge. I'm not fussed as yet about either, Though have heard ceiling mount perhaps have the edge. I've read often that a stand alone subwoofer is the way to go also, which is no problem as i'm quite happy to get one.

So in the lounge i'd like 4 speakers (wall or ceiling) Is four speakers the usual amount used for a ceiling mount surround sound/music application besides sub ?

Then in the kitchen/dining I wanted to put in another 4 (for music only of course) as this is really just one big room. In the hallway another two also.

I'm not concerned about the bedrooms or study.

Now with all that said and done, i'd also need an amplifier capable of running so many speakers because mine won't handle it. Any suggestions ?
