I just got a refurb BenQ LK970 projector. Is this not an HDR projector? So is it SDR? What are the differences and what exactly do they mean?

No, it is not.

HDR content uses 10-bit video to add additional color information and it shifts the brightness of whites down to accommodate specular highlights. So, in the past 'pure white', might have been like a sheet of paper. But, the sun would also be 'pure white'. Obviously the sun is a MUCH more intense brightness than paper is, so HDR allows for different light levels and really focuses on putting out specular highlights like a sun or a glare off a chrome bumper.

The problem is that projectors don't get nearly bright enough for this to matter. Some do have the ability to handle 10-bit color which can help with banding and other issues in gradients and such.

But, it doesn't matter that much because your projector isn't HDR capable. So, should you feed it video from a HDR encoded disc, it is likely to flatten the image down some and look dull. It won't know what to do with the HDR information and it won't remap the brightness of the image to deal with the HDR content properly.
