Somebody gave me this and I proceeded to sharpen, hone and strop it until it was viciously sharp ... just in case I go into the knife fighting business.

I thought you'd never ask. I both love and hate telling this story.

I was out pawn shop hopping, as I used to often do, and one had some knives. Most of them were crap and they sort of just had them in a pile if it wasn't a brand name knife. They did have a couple set out separately, such a s Kershaw and a Buck, but I saw something in the pile of "crap" knives that caught my eye. At first I saw only one but when I started looking I found 3 total knives that seemed to be very out of place in this lot of crap. Two of them had the same design and had "Burnley" laser etched into each blade, the other had "Rexford" laser etched into the blade. If you know the custom knife designer world well, then you know these should never have even been on display, let alone in a pile with crusty chinese frost cutlery knives.

Now I'm not extremely knowledgeable about knives, especially when it comes to custom made stuff. In other words, I knew that the knives were of quality, but I had no idea what I had just bought.

I got them home and started to do some research and learned they were all custom made limited production knives. The two knives of the same pattern were called "Squid" made by Lucas Burnley and the other was a Mini Epicenter by Todd Rexford (1 of 10 made).

I had determined through my research these knives belonged to someone and they had been stolen from the individual, thanks to some social networking websites.

I found a way to get into contact with the individual and he was ecstatic to learn his knives were not gone forever. He agreed to reimburse me for what I paid and surprised me with the ZT Flipper, which ironically was a Todd Rexford design that ZT put into production.

All told, I am happy to have been able to make that guy's day and return something that was precious to him. I could only imagine how that would feel after believing they are long gone. But sometimes, I wish I had just put them in my safe and never did the research to learn their true value and ultimately that they where stolen.

Just got my new Kershaw Launch 1 yesterday, very nice and super sharp. Should have my Microtech Ultratech OTF in a couple of days, I'm super excited about this one.

Went to Sur La Table today to get a knife sheath and ended up picking up a new chef's knife. Miyabi Kaizen II 8" hand forged. It was on sale and the chef was there after he was done teaching a cooking class. We got to talking and he gave me an additional 10% off the sale price... Couldn't pass that up. It has a different handle than my previous Miyabi Morimoto, but I like the new handle even more. It ended up being less than the paring knife.

I was in SF two weeks ago in Japan town there and went into a shop and saw some of the craziest chef's knives I've ever seen. $1000 each! And the lady said a number of famous chefs come to their place just to get them.

I'm somewhat of a knife guy just been getting into it kind of recently.

I got this one for X-Mas this year! :)



It's a Zero Tolerance 0456.

As far as my initial impressions are concerned, I'm really quite impressed with the chamfering, beveling and milling work that went into the handle. It's something that my picture doesn't quite capture and needs to be held in hand to be really appreciated.

I've updated my knives over the last year. My current EDC is a 2.5oz Benchmade 940-1 made with S90v steel. I like it because of it's quality, lightweight, and slim size.



My kitchen knives were also upgraded to a set of Zwilling J.A. Henckels Pro S that are way overkill for my needs but I caught a series of great sales. I still keep my Blurs and my Zero Tolerance 0770CF for heavier work and my BK9 still sleeps next to my pillow.

I've been wanting to use a ceramic knife for a long time, I just never got around to getting one. I have nowhere to put it, and it won't stick to my magnetic strip. I'm guessing it stays sharp for a long time, but how do you go about sharpening it once it starts to dull?

Just like any other knife, except sharpening surface must be different. Only thing which is harder than ceramic used in these knifes is diamonds [que in - Diamonds are forever song] - so industrial diamond dust covered surfaces should work, albeit take much longer.

You could also send it to professionally sharpen. But if you follow the few basic rules such as - avoid push down only cutting (push-pull is better for edge longevity) and no where near bones - it should keep it's edge for a very long time

You have good taste. I've owned a Leek, a Scallion, and a little bitty Damascus Steel Chive and loved them, especially the Chive. :D
