Use a Y-splitter in the sub-out jack of the receiver to hook up two subs.

If you go with the ED speakers, you will blow your entire budget on speakers and receiver, and you will be left with no bass. I don't think it would sound very good. If you intend to buy a sub later, that is alright, but you will need a hell of a sub to keep up with those mains. It won't be cheap, or small, or light-weight. You would want a pair or ED A7-350s, or Hsu VTF15hs, or SVS PB12 Pluses, or something like that. In the end though, you would have something that absolutely pounds. However I think you might regret it because you would never even use half the system's capability. And if you actually did use half the system's capability, it wouldn't be long before you suffered permanent hearing damage.
So ideally and this is pushing me over my budget somewhat I would want something like (if I was going this route)

My total would be around 2600 ish
But I could never actually use the system.....unless I throw a party and invite my neighbors lol

That system would scream, of course. I think the mains would still be a bit more proportionally powerful than the subs you linked to, but like I said before, the subs that could actually scale up with those mains would have to be absolute beasts. The nice think about those subs is you could use them as stands for the speakers, as they are about the right height and the speakers themselves are too large for most conventional speaker stands. If you wanted to save money, look at the Klipsch speakers I mentioned earlier, they will also get louder than your ears can handle, although they won't quite match the efficiency of the ED Cinema speakers. I think they will be more refined than the ED speakers, given that is the fifth generation of RB-61s, and the ED speakers are the first time that I know of where ED has tried to tackle horn-loaded speakers at all.

I would say if you are listening to music mostly, then go with a two channel receiver rather than a 7.1 AVR. It'll save money and get you a better amp section, but you give up Audyssey room correction and on-board bass management. I guess you'll have to weigh the pros and cons.

I will throw out another suggestion to confuse you even more: for your purposes, you might check out the QSC K12 actives or K10 actives. They have quite a bit of admiration from the DIY guys at AVSforum, and those guys really know their pro-cinema styled speakers. Since they are active you can ditch the receiver and hook your source up to it directly. They will get a hell of a lot louder than the ED speakers, as they have built-in 1 kilowatt amps. You would still want subs with them as they are down quite a bit by 60 hz. But above 60 hz, holy s***, 130 db at 1 meter! Did you like that JTR video? -these can do that. If you like to rock hard, these babies will rock hard. You can get a pair of k12s for 1700 shipped. You would need a very very serious subwoofer to keep up with these speakers though.

I listen to bands like the Zeppelin (of course :p), to Atreyu, to The Muse to DubStep, hip hop artists like Atmosphere and Diabolic.

If I did the Cinema's would I need an amp and what type of AVR?
I also listen to dubstep and a sub is an absolute must have. No tower can give you the bottom end and subsonic feel that is essential here.

I believe they are interchangable in this context, but infrasonic is more appropriate :).
Pfft, even my 5.25" 2-way bookshelves can give me subsonic bass :D

I did mean, what we cannot hear, content typically below 20Hz, yet the tactile effect on the body cannot be discounted. To quote myself...
No tower can give you the bottom end and subsonic feel that is essential here.
