I need to pick up a kettle as well. Have a gas grill now for those times when I just want to fire it up and go, but need something for those "low and slow" cooks :)

That's just the One Touch Gold model... 22" and has the ash basket on the bottom instead of just the open catcher. I picked it up for $140. The Weber Rotisserie is about $130.

I have a big commercial grade smoker that I use too, but I just like cooking over charcoal. I have a big Weber gas grill which I use too, but honestly, it takes no more time to use the kettle then it does the gasser. It takes about 20 min for my gas grill to get to temp and heat the grates thoroughly and it takes the same amount of time to get a chimney's worth of charcoal where I need it. It's just six, half dozen, or the other in my book.

Don't sweat it... if you can stab a hunk of meat with a sword, you can rotisserie just about anything.

Screw the BBQ, I wanna take a dip in that pool. Perfect weather for it around here right now.
You may have found me floating in the pool with one of the ribs in my hand. :D It is the perfect time right now. We've been spending just about every evening out on there. It's a nice way to relax after a brutal day at the office. Prime Rib just makes it that much better.

We finally got rid of our old Weber. It was 28 years old, the bottom third was rusted out and we used an old fan grill from a standup fan to hold the coals. That eventually melted and rusted out and we didn't have another grill to use.

It cooked a tasty burger though.....very tasty....

Oh did I mention that the feet rusted away and we used an upside-down stool to hold it and bricks to keep it from tipping over?

The gauntlet has been thrown down gentlemen.....

Chris, that beef looks perfect! I have a Genesis EP-310 and although it's a gas grill, I love it. Just add a smoker with some hickory chips and it does a great job.

Hmmm, that brings an analogy to mind:
Charcoal grill = Tube amp
Gas grill = Solid State amp

:D

I have a Weber gasser too. I use it all the time. We grill/bbq about 2-3 times a week. I just got the kettle. I have a big smoker rig that I used for grilling sometimes, but it was just a pain to use that way. it's a big commercial grade offset smoker. Over the past few years, I've just retreated back from the high tech stuff and have enjoyed going simple and old school. It started with getting the big smoker because my thought was "what could be more primitive?" On a spur of the moment, I just said "f-it" and went got the kettle, bought the rotis and went at it. I love cooking with charcoal and the kettle just made it a whole lot easier for me.

I think Prime Rib has to be medium rare. Once you get beyond that, the flavor really starts to change and dissapate. My thought is, if you're going to cook this sort of thing... or especially steaks... beyond say medium-rare to medium-rare-+, you don't need to spend the money for the higher quality grades of meat because once you get to medium or a bit more, I doubt you'd notice the difference. So I'm cooking for people who like their meat mostly medium, I'll just buy standard Rib Roast. The same thing just not Prime. It saves a ton of money.

That's the real reason the finest steakhouses always question anyone who wants a steak medium-well or well. Some won't even serve their steaks that way. It's not because they're snobs and want you to have the steak their way, it's that there's no point in spending the money for it. A perfect example is that we took our neighbors to Bern's here in Tampa, one of the country's premier steakhouses. My neighbor insisted his NY Strip be cooked well despite. Days later he's saying he doesn't see what the big deal is about Bern's... "their steak was no better than Outback." Then weeks later, my other neighbor and i were talking about going out for dinner for his wife's b-day and he said, "I was thinking about going to Berns, but John said it was just overpriced hype." Well... that's exactly what a 5 star restaurant is trying to avoid by not serving steaks that way. There's no point in a $80 steak being cooked that way because it probably won't be that much better than an $17 steak at Outback, Cody's, or any other place like that.

Usually when I cook a Prime Rib, I try to cook it at a lower temp then sear it afterward to try and get the medium rare temp all the way through. This one was close, but it got a little too much heat and you can see where it got to medium about a half inch or so into the center. It was still fantastic though! In fact, I have a big hunk here at my office for lunch!

Medium rare is what I ask for all the time...it usually comes out more rare which is fine with me but I hate when they're overcooked :(

By smoker, I just meant a smoker box to place inside the grill. It's not as good as a dedicated smoker, but it does add flavour. I need to get a new rotisserie for mine. When my old BBQ got dumped, the rotisserie I had wouldn't fit on the Weber.:mad: A full scale smoker would be nice, but I doubt I'd use it enough to justify.

This discussion reminds me - I need to give my BBQ a spring cleaning. But, it's been raining here steadily for the last 2 or 3 weeks.:mad::mad: I use it year-round, but trying to clean it during the winter is just not a lot of fun.

Anybody know of a rotisserie to fit a Weber EP-310, other than a Weber rotisserie? I'd rather not pay $100 for the Weber.
