Cat5 or 6 for Component + audio.

Cat5 to Component w/digital audio adapters are common and not to expensive. but I want to do stereo, 2 chan audio. I found one adapter but it was $350, way more than I want to spend.

Using the 8 wires in the cat5, could I just use 4 for the video (3 for RGB and 1 for common ground) and the other 4 for 2 chan audio? (obviously all preamp level)

$350 is an eye gouge. Look on Parts Express- they have Decora inserts that have all of the necessary connections and you just need one Cat5e plugged into the back. It's a two part device, so you'll need another on the source end. You don't need to use separate keystone inserts for each jack unless you use bundled cable with RG59 x 6 or RG59 x 5 with a Cat5e. .
