I'm thinking of joining the less-is-more fan club. Does anybody make 5.1 or 7.1 amps that DON'T do video?

I assume you mean "receivers".

External processors would, but then you won't have a source switch. I can't think of any.

That's right. An amplifier has no processing of any kind and are intended for audio only (in this context). A receiver does have processing, and that would be one of the primary differentiations. There is no such thing as a "5.1 amp"; an amp simply has a number of channels.
