Do you have a favorite recipe to share?

My wife wanted to know what I wanted for dinner on Fathers Day. I told her Chili after reading this thread!:) She'll make the run of the mill hamburger/bean with bell pepper, onion & other stuff. I like it and of course I doctor it up a bit.:cool:
So far this is the best one I have made. You will have to double or triple the number of peppers that it calls for to get the 1 1/2 cups of the paste depending on the size of the dried peppers. Make sure you cube the beef instead of grinding it. It also does not have to be prime beef; you could also use venison or buffalo.

Yes, it would be next year. It is far too short notice to do anything this year. July is the best month for weather here usually.

The nearest one is in Portland...2 hours away. But we do have some good Mexican grocery stores here. Viva la salsa!!

Ah...I made Huevos Rancheros de la Manana (Tomorrow's ;)) on Sunday morning! Sweet red, yellow, and orange peppers, lots of chile pepper oil sauted garlic and onion, eggs smothered in habanero jack cheese, cumin and Penzeys Southwest Seasoning seasoned whole black refried beans, Manana's guacamole con adobo. All topped with sour cream, cilantro, and epazote. Lousy store bought tortillas. I have to start making my own.....................

Sounds wonderful! Some of the best breakfasts I have ever had have been Mexican.

Oxtail with rice and peas or maybe some brown stew fish. :cool:

Then maybe break open a bottle of overproof to wash it down. :eek:

My favorite everyday sauces (so far) are the Blair Jersey Death or Mega Death, Mad Dog 357 Collectors Edition, Da' Bomb Final Answer and lastly Dave's Private Reserve.
A local store has a good selection of Blair and Mad Dog hot sauces (among others). I will probably pick one up based on your recommendation.

I warn you, Andrew. Majorloser is nutzoid when it comes to hot foods. Really. If he says it's hot...it'll pit your iron skillet...or melt anything aluminum. :eek: ;)

BTW, as usual, I enjoy your visual posts, too!

Thanks for the warning. I will be careful with the stuff, at first. A drop goes a long way with some of those sauces. :D

The Blair A.M. Reserve series are the hottest out there. But they are really considered collector items and are ridiculously expensive. They are all well over 1,000,000 Scoville units all the way to 16,000,000 units. Most of them you have to pre-order. It's best to join their collectors club to get advanced notice for upcoming specials.

I think I am going to try out the cheap stuff first :).

BTW I made these poppers for my dad Fathers Day - not too spicy by my taste*, but tons of flavor. Read the comments to find out how to make them without a tray.



*Some thought they were pretty spicy. The Fresno chilies less so.

Paella!

A couple of weeks ago my close friend Dr Phil Marin, my wife and I cooked Paella, the national dish of Spain. We used the correct Spanish Bomba rice grown at altitude. We did the prep cooking in the main kitchen and did the actual cooking outside.

Surgeons at work deveining shrimp! I'm in the center, with my wife Denise, who is a cardiology NP, to my left is Dr Philip Marin, the retired nephrologist of our critical care team. He is also the proud owner of a set of B & W 800Ds with Mac power.

A meal enjoyed with friends. Dr Allan Miranda, a former resident and later colleague on our team. Now chief of cardiac anesthesia at Fairview University Medical Center Minneapolis. His wife Lori, a nurse anesthetist and two of his three children.



A time to relax and catch up on events.



It was a great weekend and a lot of fun. The next day our fifth grandchild and fourth grandson was born. The first child for my son Andrew and wife Jill. We all headed to the Twin Cities the next day to meet Isaac Carter.
