Folks as many of you know, this coming Monday May 25th, 2009 is Memorial Day. Originally, it was called Decoration Day which I found to be rather interesting. You can read about that here:

Anyways, let me be the first to wish all of my audioholic family a fun, but safe, holiday. Please remember, however, all of those fallen heroes who gave their lives for the very freedom we all enjoy! I salute those that have given their lives for this great country. Job very well done imho! :);):) For that, I am forever grateful. :):):)

Friday? You do mean Monday right? Or, does your holiday weekend start this Friday? If so, be sure to live it up! Go all out! Hold nothing back! Most importantly, just be careful and have lots of fun. :):D:)

Hey Mud, it is hump day. Friday will be here before you know it. Then, you can live it up bro. Be sure to drink one for me. :D:p:D Wished I could have a few myself. But my diabetes will not allow it. Lord knows, I have enough to deal with as it is. Have a great holiday weekend. :):cool::)

Like i said in the other post I am hoping to take my canoe out tomorrow to this very cool lake(and do some fishing) and saturday night I am hoping to hook of with a few friends at a farm not fare from my place and drink some beer and shoot some guns and watch the campfile all night.

You know, that really sounds like fun. Nothing like enjoying the great outdoors imho. It is good to have a getaway like that!!!! Hopefully, the weather will not cause any problems. Well, enjoy yourself!!!! Keep us posted. Hope it all turns out great. ;):);)

Don't drink much anymore other than an occasional Heineken. Abused it in my younger years but that was long ago. I have friends some in their thirties with diabetes and most other than diet live full and energetic lives. I hope it is the same with you.

Yeah, I try to. However, diabetes does create problems from time to time. Of course, eating right will make all of the difference. More specifically, one has to watch the carbs. I don't drink at all because once alcohol enters your bloodstream it quickly turns into sugar. Thus, creating a big problem for diabetics. I do appreciate the support though Mud. You really are a great guy!!! ;):);) Have a great holiday my friend.

I know this is a day to commemorate those who served, but it’s also the 1 year anniversary of a tornado that ripped a 5 mile swath through our town, destroying a lot of homes, and claiming the life of a two year old boy. So, it’s going to be a different kind of remembrance for us.

All this talk about avoiding food and beer makes me want to talk about… food and beer!

Memorial Day weekend is time to fire up the smoker. I'm having a bunch of people over on Monday, and we're gonna serve pork barbeque. I'll stop on the way home tonight to pick up two pork shoulders (aka pork butts) and some beer. Beer is a necessary component when smoking meat in the backyard. (Before anyone else says it, I'll say it first: Question: Don't you have trouble rolling that in those little papers? Answer: You have to practice a lot! :rolleyes:)

I'll coat the meat with this dry rub and let it sit overnight in the refrigerator:
  • ½ cup paprika
  • ¼ cup kosher salt, finely ground
  • ¼ cup sugar
  • 2 Table spoon mustard powder
  • ¼ cup chili powder
  • ¼ cup ground cumin
  • 2 Table spoon ground black pepper
  • ¼ cup granulated garlic
  • 2 Table spoon cayenne
Then on Sunday morning, I fire up the smoker and put the meat on for some 5 or 6 hours until its about 185° inside. I'll use charcoal with chunks of apple wood for flavor. Once the smoking starts you have to stay around to monitor the fire and add more wood occasionally. This is when the beer becomes important. When it's done, I let it cool about an hour and then my wife and I and anyone else around pull and shred the pork.

Some time during all the smoking, I have to make some bbq sauce. I won't need it until we serve the bbq:
  • 1 cup ketchup
  • 2/3 cup seasoned rice vinegar
  • ½ cup apple juice or cider
  • ¼ cup apple cider vinegar
  • ½ cup packed brown sugar
  • ¼ cup Worcestershire sauce or soy sauce
  • 2 tsp prepared yellow mustard
  • ¾ tsp garlic powder
  • ¼ tsp ground white pepper
  • ¼ tsp cayenne
  • 1/3 cup bacon bits - ground in a spice grinder
  • 1/3 cup peeled & grated apple
  • 1/3 cup grated onion
  • 2 tsp grated green bell pepper
Combine ketchup through bacon bits in a sauce pan. Bring to a boil over medium-high heat. Stir in the apple, onion, and bell pepper. Reduce heat and simmer, uncovered, 10 to 15 minutes or until it thickens slightly. Stir often.

I've done the smoked pork before, but the recipes for the rub and sauce are new. I think its gonna taste great. I'll keep you posted of the results.

The best time to show up is when we shred the pork. It takes time, but you can always sample some as you work if you're hungry :D.

The best time to listen to music is during the hours of smoking. On Monday, there'll be too many people yakking. If anyone wants to actually listen to music, they'll just yak louder.
