IF I were to buy a DVD player with a DTS encoder that also had 6 discrete anlaog audio outputs for the 5.1 could I play a DTS encoded CD through these outputs? or would it be the digital out only? Im thinking digital output only but need some clarity on this

Assuming you mean DTS decoder, yes, it should play the decoded DTS audio out via the analog audio outputs.
