As most of you probably don't know:)p), Canada celebrates Thanksgiving at a different time then the US. Nevertheless, the values and feelings towards this occasion are the same.

I behalf of my Fellow Canadian Members I would like to wish everyone a safe weekend, even if you don't get Monday off (woohoo).

Happy thanksgiving to you Sheep and all of our fellow Canucks!!!

I am having thanksgiving dinner on Sunday rather than Monday. I am starting my prep tommorow for the dinner which includes defrosting the turkey, prep the stuffing, making the cranberry sauce, pecan pie, pumpkin pie and any other menial tasks for the other side dishes. There are also 3 cases of beer + 6 pack chilling right now but unfortunetly I am starting to put a dent into that already.

I have to be honest. I don't understand why Canada has a thanksgiving at all. Isn't it an American holiday that celebrates the Pilgrims sitting down for dinner with the Indians before they chased them off their land and killed them all? We don't have anything like that in our history. But I'll still take any excuse for getting a paid day off work.

You might be able to pull that on the rest of my countrymen here in America but I graduated high school up there. Done been schooled about how Canadian history isn't all about hockey and fish & chips. :cool:

Actually I barely graduated but remember something about the Red River Rebellion which deals with the Canadian Government having their way with the indigenous peoples up Manitoba way.

The problem with Canada/Canadians is our lack of lack of enthusiasm for anything other than Hockey season. Our election is days away and there is very little buzz and if wasn't for this long weekend (as Dave mentioned) you wouldn't know it was the Thanksgiving Holiday.:(

Roast Turkey
Gravy
Stuffing
Cranberry Sauce
Butter Cup Squash
Mashed Potatoes
Creamed Onions (sounds gross but it is one of my absolute favorites:))
Roasted Beets and Carrots
Mixed Green Salad
--------------------------------------------------------------------------
Pecan Pie
Pumpkin Pie with Cinnamon and Vinalla Bean Flavoured Whipped Cream
Ice Cream

Minus - man, oh man, that sounds good! Very similar to the traditional meal in my family (and most in the States).

The creamed onions has me intrigued, mostly because you said it was one of your favorites. Would you mind sharing the recipe? I certainly like onions.

If you'll note, the Red River Rebellion was a French/English conflict and the only person that died was executed by the Metis revolutionaries. The government of Canada negotiated a settlement that gave the revolutionaries most of what they wanted. Riel himself couldn't leave well enough alone and led the North-West Rebellion 15 years later, for which he was convicted of treason and executed. There's little to no native involvement in either conflict.

Canada may have a somewhat shameful record in native affairs but mostly due to broken treaties and the implementation of a reserve structure similar to that in the States. But I am not aware of any Canadian military action against natives like what happened in the States.

Creamed Pearl Onions

Step #1

Ingredients:
3 Small Bags of White Pearl Onions with skin on.
3 Cups of Water

1) Fill the pot with 3 cups of water and bring to a boil.
2) Once the water has reached a boil add all the onions (Leaving the skin on). Boil the onions until soft and tender but not mush.
3) Once they have reached desired tenderness extract the little onions from the water and place them into a bowl and let cool.
4) Reserve a cup of that cooking liquid for later (do not throw out)
5) Once the onions have cooled peel the skins off. Discard onions skins and reserve the onions for later.

Step#2: Sauce Béchamel (I use Anthony Bourdain`s Béchamel recipe for the sauce, this is taken from Anthony Bourdain’s Les Halles Cookbook (Strategies, Recipes and Techniques of Classic Bistro Cooking)

Ingredients:
1.5 ounces/ 42 g of butter
1.5 ounces/42 g flour
2 cups/450 ml milk
Salt and white pepper to taste
Pinch of nutmeg

Equipment
2 pots
Wooden spoon
Wisk

Add milk to pot and bring the milk up to a low simmer. In another pot melt the butter until the butter foams and it subsides. Add the flour at this point and stir with the wooden spoon, this is called a roux. Cook the roux for a few minutes but do not allow the roux to take on any colour. Once the milk is up to a simmer add the milk to the roux and whisk until the sauce is silky smooth. Cook over low heat until the sauce thickens. Once the sauce has thickened, I add some of the cooking liquid from the boiled onions and add it to the béchamel just tp thin it out a tiny bit so it becomes a consistency that I like. I grate around 1/4 teaspoon of nutmeg and add salt and pepper to taste. Mix it around, taste it and if it seems a bit bland add more salt. You can even add a splash of white wine if you like to finish the sauce off. After that is complete, add the cooked pealed white onions to the sauce stir then add it to oven proof dish to heat through later. At this point everything is fully cooked so just heat in a 350 degree oven until it is bubbling.
