Cuban Ham Corquetas

Well here you go guys, these are a favorite down here, I got the recipe from my mom's neighbor, I grew up eating these, but my favorite always came from my mom's neighbor, over the years my mom learned to make a variety of hispanic foods from friends and neighbors, these are great. When we were kids, we use to stay up late at night on Fridays and watch Big Wilson on Channel 6, next to us a plate filled with croquetas, saltines and plenty of Coca Cola, we'd stay up till 4 or 5 in the morning eating croquetas and watching classic flicks!


INGREDIENTS


4 tablespoons butter
1 medium finely minced onion
1/3 cup flour
1 1/2 cups milk (more or less) at room temperature
1/4 teaspoon nutmeg
1 tablespoon finely chopped parsley
4 cups (about 1 pound) smoked ham, ground (get the good stuff)
1 cup dry bread crumbs (more or less) very fine, (cracker meal is best if you can get it, amke sure and get the unsalted variety)
Salt & black pepper to taste


COATING

2 eggs, beaten with 1 tablespoon water
1 cup dry bread crumbs mixed with 1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
Vegetable oil for frying

COOKING


In a large pan, melt the butter, add the onions, and sauté until translucent.
Stir in 1/3 cup flour to make a roux -- add more butter if necessary to make a smooth roux. Gradually whisk in the milk to form a smooth sauce. Continue cooking until the sauce thickens. Your sauce needs to be very thick -- like wallpaper paste! Whisk in nutmeg, sherry, and parsley. Fold in the ground ham and one cup bread crumbs.

Let simmer for five minutes on low heat. Taste and season with salt and pepper if necessary -- the ham probably has enough salt already. Spoon the mixture into a baking pan and refrigerate until well chilled -- at least one hour. NOTE: The mixture needs to be firm enough to form into rolls. If your mixture is too soft or sticky, add some additional bread crumbs.

Shape the ham mixture into logs about 3/4-inch thick and three inches long.

Make an egg wash by beating the eggs with water until frothy in a small bowl.

Combine the bread crumbs and flour in a second bowl; add salt and pepper.

Dip the logs in the egg wash and roll the logs in the seasoned bread crumbs. Dip a second time and re-roll in bread crumbs.

IMPORTANT: Cover logs with plastic wrap and refrigerate for two to three hours. (You may also freeze for later use, or use the freezer to quickly chill them.)

Sauté the croquetas in hot oil -- about 350º F, a few at a time, three to four minutes, turning occasionally, until golden brown. Remove from oil and drain on paper towels. You may also cook them in a deep fat fryer.

This is a typical Cuban recipe. Croquetas are very popular in Miami. I've even seen Bobby Flay attempt to make them, but he didn't get it right (authentic.)

Is this legal to make here? I thought anything Cuban is banned:D

By the way, can you substitue with non-fat products? Need to watch my figure ;)

As long as you don't smoke one!:D I've never tried it with low fat substitutes, so I'd give you wrong info, but on the bright side you do a batch and have one a day (like the vitamin), problem is that thy're likes Pringles (you just can't have one.):D

Huh? Do you do the same with people who smoke cigarettes? :)

I absolutely understand anyone's desire to not endure second-hand smoke, but a good cigar is wholly different that all the chemicals they inject into cigarettes. Ahhhh, what do I know? I've been trying to emulate Hemingway for some time now, to no avail. :p;)

Maybe not 1/4 mile, but I do try to stay well away. As bad as cigarettes stink, they are nothing compared to the putrid stench of cigars.
Even when someone is not smoking but has merely been smoking recently, the smell from their clothes and breath is offensive.

Really? I've only noticed that with the $0.10 cigars...White Owl and the like...and some overpriced cheap cigars. Some people can't differentiate. Some people feel the same about whiskey and sushi (offensive). Well, we each have our own palate, don't we?

The obvious difference being that whiskey and sushi are potentially offensive only to the person drinking/eating them. The nasty smell of cigars gags everyone nearby. The cigar lounge is a great concept, as long as the door seals really tight and the people who go in there stay away from me for an hour or so afterward.

Best way to eat croquetas down here in the tropics: just baked Cuban bread (not what they pass for Cuban bread in Publix, but from the small mom and pop Cuban bakeries) sliced down the middle, place 4 croquetas, no condiments to get in the way of the flavor, squeeze down a bit till you see the golden crispy croquetas slightly bulge, a nice cold beer and a side order of extra thin shoestring potatoes, while you sit under a coconut tree. Have a nice lunch fellas.:D
