I'm using a sony AV receiver and DVD player and am unsure of what to use to connect the sound portion of DVD information: coaxial or multi-channel cables (5.1). What are the pros and cons of each.

Seriously, I have no life.

Use the coaxial cable. You have more options bor bass management, etc. Your digital signal has less chance of degradation than analog, so send it as far as possible digitally.
But, if you are playing SACD or DVD-A, you need the analog out to get surround from them when recorded on the disc.

Would you still have to use analog out or even the coaxial if you are using the HDMI connection?

I simply used HDMI from DVD to receiver and receiver to monitor.
