For movies I would recommend most anything out of Pixar. They always seem to do a great job of making use of surround. Cars is an especially one to look into.

You could always check out Sin City if you want more adult. I thought that was done rather well or check out Fifth Element as well.

Movies: All those mentioned, plus Master and Commander

IN addition to those titles already mentioned, I'd add

House of the Flying Daggers DVD- "The Echo Game" scene is absolutely amazing. I put this on and watch the jaws drop in amazement

Master & Commander - Battle scenes

Pink Floyd - Pulse DVD
Dave Matthews Band - Central Park Concert DVD
Neil Finn - Sessions at West 54th DVD

If you have an SACD or DVD-A player in the mix, then
1. Pink Floyd - DSOTM
2. Elton John - Tumbleweed Connection, Mad Man Across the Water,
Captain Fantastic, Honkey Chateau (all of these have
excellent 5.1 mixes)
3. Steely Dan - Gaucho
4. Dire Straits - Brothers in Arms
5. Depeche Mode - Violator

I have to agree with any of the Porcupine multi channel DVD-A's. Great for showing off 5.1. Brother's In Arms is an awesome SACD. I love the acoustic/lighter tracks of the Jackson B. Running on Empty DVD-A and in the country slot I always show off Alison Krauss - Live sacd.
