You don't need much to do a stereo setup. And if you're looking to do a Quad setup with 4 bookshelves, any 5.1 capable receiver will do this. Depends on if your goal is a good 2 channel setup, or if your goal includes actual surround (upmixing) of stereo source or if you plan to use multi-track audio.
I'd look at a Yamaha V-385 or V-485 or maybe Denon S750H or similar in that range. This gives you plenty of stereo power, plenty of surround choices, and the ability to add bass management if you ever wanted to add a sub or two. Solid units for a good price.
Alternatively if you do not need upmixing surround, you can get really great power amps in this range.
