Do rack style amps run in the same price range as plate amps? I would prefer to no alter the box but I am willing to if the pricing has a large difference.
To a degree, but rack amps are often 2ch rather than just mono so cost effectiveness comes into play as well. Popular ones for subs are Crown, QSC, Behringer...at various price points for various models. These are generally fan cooled amps, some very quiet and living room worthy like the Crown XLS, some others can be a bit loud (or you can modify them). Used might be a good way to go...

I think I've landed on what I wanna do. I'm going to likely get a plate amp and just build an independent box for it to sit in without altering the sub box (may end up installing directly to sub box). Would this plate amp be sufficient enough to push my subs if I decide to go heavy on the bass every now and then?: https://www.parts-express.com/bash-300s-digital-subwoofer-plate-amplifier-300w-rms--300-750?AID=1457483&PID=9011671&SID=130832X1592984X52d882e229ed23557df88fd3d9c6a71b&cjevent=118b33d174cd11e9830302250a24060d

I didn't go back thru the thread but what kind of impedance load are your subs for an amp? You may need two amps (or two channels of amplification) for the two subs.
