I hope to can take time to audition many brands of speakers, and other equipment to try to find the right fit for you. IMHO Speakers & good Subs are where the most impact will be heard (no pun intended). The electronics are, mostly, pretty level if you stick to the main name brands, but some have better reputations (Denon, Marantz, Yamaha, and maybe Sony) than others (Onkyo & now Pioneer who was bought by them) who jump to mind.

Others here, Pogre especially as he has recent experience with SVS, should be able to advise if another pair of those would be required for 5.1 and eventually 7.1 setups. I've read where folks use SVS Prime Satellite speakers for those, and they timbre match quite well, and are cost effective for the limited program material channeled to them. In your case if music is #1, then a focus on those Front Speakers and Subs is prudent.
Your choice for a HT Receiver is a bit more complicated. At "roughly around 800sqft" to me it seems natural for you to pre-wire for Dolby Atmos as you've got a drop ceiling, which makes it easy. However, that puts you into the top rungs for a HT Receiver - especially if you want to maintain 7.x as the ultimate goal. (I'm still thinking two good Subs => so 7.2) You could go whole hog and wire /speaker for a 7.2.4 setup and move straight into an 11 channel amp (say a Denon AVR-X6300H and it's discounted price tag of $1200 USD when / if one comes available.) or compromise a little, and head to a 9 channel like a Denon AVR-X6200W.
