Thanksgiving is always my favorite holiday. My birthday was two days ago, that may have something to do with it.
My son is here now and my daughter is on her way. My brother & family will show up later.
Yesterday my wife & I put a 19 lb bird in a brine bag. I put it into the vegetable bin, but it was tough getting it all back into the refrigerator. An hour or two later, I noticed the bin was full of brine. That bag leaked! So I turned the bird over several times. I hope that will do the job.
The bird went into the oven at 10 this morning, and a short while ago I took it out and tented it with foil. Three hours and done!? I wondered about that but meat thermometers don't lie. Plenty of time to let it rest, and make the gravy from the pan drippings.
At roughly 4 pm, the Bird is the Word! Happy Thanksgiving!
