Smoked prime rib is awesome (just ask Swerd when I made it for him). I used a 7 taet's SEVEN BONE IN Prime rib. I made a paste of oregano, parsley, basil, rosemary garlic, saly and olive oil. I cut along the bone to make a hinge and covered all exposed surfaces and the hinged area with paste, wrapped it all in cheesecloth to keep the paste on. Smoked it with cherry and oak at 300 degrees until 135 degree internal. Perfect medium rare. The dogs each got a bone and there was complete silence from them for two hours except a growl if anyone walked by. I can post a picture tonight.
Next time I will hire you to come and cook the rib. We have thanksgiving here every year 30-50 people depending on how crazy my wife gets with the invites.. Normally I do a stuffed turkey and then a deboned turkey stuffed with a deboned chicken, we end up with around 55lbs of meat all together.. But this year I am doing the turchicken {like a turduckin except the duck is an acquired taste and the turchicken is much easier} and a pork rib crown roast, I seen it at a party over the summer, it was impressive... Tasted OK, too...

I see what appears to be small girl in the reflection. Is that what you are talking about?:)
nope thats me, I do sometimes get mistaken for a "small girl" though, it gets embarrassing after a while and some times dangerous, when ever I am in Texas its either some cult trying to kidnap me or some old man on a mountain bike trying to give me candy if I reach in his pocket to get it...:p

LOL...There is some cult-culture thing on the internet called "Old Greg". My nieces started calling me that at my nephew's wedding a couple of months ago.

I had some national sales training a couple of weeks ago and during "introduction" I told of the story of "Old Greg", I had the young-uns cracking up and they got a real kick out of it. At the end of 5 days of training, a couple of the "cool, young and popular" reps came up to me and said, you are a really cool guy. I got a kick out of that....

Oh boy, I have bad news for you Greg:(.... lol, no sa just kidding, you seem "cool and hip", in a "no jive turkey" sort of way"...

PS-"cool" guys don't say "cool" and they most definitely dont get "kicks" out of stuff... Its time to be the wiser, well kept, more educated, and experienced "guy".... lol...

Buy this house down the road from me and you will be close enough for me to help you figure this transaction out... http://www.forbes.com/pictures/mhj45gikk/the-cotton-tavern-pomfret-ct-14/

How about I just keep bringing in 4x the revenue they do? My wise-ness is slowly deteriorating and I seem to care less about being as "well kept" than I used to. Just this year, I changed my shaving routine to every other day. I feel good about it...really good...

Dude, if I bought that house we would have to eat sandwiches each day until we die...

Ha!!! You have, my friend, indeed taken the first step. You will find that comfort trumps appearance with increasing regularity. And the best part... YOU WON'T CARE!!!! :) Happy, happy, happy.

ps. It sounds like Greg is the new Chester.

chu imagine how long it would take to do an 8lb roast, lol... I had a company come to my house and show us a water bath machine, kind of like door to door vacuum salesman, and I didn't buy it, but my wifes sister did {thats who sent them to bother us}, so I have eaten out of it a few times {my sisterinlaw loves it}, once was chicken and broc/carrots it was okk, nothing special tasted like chicken, another time was rib eye steaks, I wanna say 10oz portions, they were tender and good, but she cooked them in butter after they came out of the machine, how could that not be good, I will say this, seeing the steaks before they cooked and after they cooked down very little, almost the same size as they started, that is cool... BUT I want to say I think it would be healthier to cook in a pan when dealing with meats with decent fat content...

Anyway seems like a lot of work, vacuum seal the portions before you boil them {not really boiling, you set the temp at your desired internal temp}, then if you want them browned you need to dirty a pan anyway... Way too much work for what seems like lesser of a result...

No. Had to look it up. Have seen it a couple times on TV. Looks interesting, but I'm skeptical. To me, the act/method of cooking adds flavor... wood, smoke, sear, brown bits, etc. I have to agree w/ ImcLoud.
