Without question, I'd get the Yamaha, but that's just my opinion. :D

I've heard both hooked up to the same system. I also heard the 3805 in that system and liked the Yamaha best of all. Now that's just my taste, yours my be different and you may prefer the sound of Denon. Some people I know couldn't hear any difference. As far as user interface, Yamaha wins! Go listen to both, then play with the features of each and decide what you like. My wallet still votes Yamaha.

Quality-wise, they're about equal.

In your case, I'd take the Yamaha for two reasons:
1. It's cheaper
2. More inputs/outputs, etc. The Yamaha 2500 is more comparable to the 3805, so if you're finding it cheaper than the 2805, go for it.

You really can't go wrong with either receiver though.

That is exactly right, 3805 to 2500, and 2805 to 1500. Good advice.
