@BoredSysAdmin and anyone else who might know,

Taking my iPad to Italy tomorrow.
I'm not much of an iOS guy and probably was using the wrong search terms in Google, but had no luck finding a solution.
What I want is for my email account (Gmail) to be password protected every time I open it.
I worry about ID theft, and shudder to think what a diligent criminal could find if they started going through my email!
How rigorous is the fingerprint reader or using a 6 digit passcode?

You can't really do that, but there are other means:
Enable find my phone, Enable remote wipe and change 6 digits passcode for alphanumeric one (8 characters or more - don't focus on special characters, instead use two-threee random words, longer the better)

Enable pin requirements very often and always with power-off press.

Yep. Once you enable passcode of any type the device is encrypted and can be wiped if too many attempts occur. That and find my iphone is great. The location and remote wipe are invaluable. Plus if you enable activation lock it is a brick for anyone that steals it and doesn't have your appleID credentials. Be sure to enable two factor authentication on your appleID as well for added security.
