If I was to build this center speaker and build the outer front baffle with 1/2" to 3/4" hardwood (for esthetic), would this change/reduce the quality/performance of the speaker?

It already has a double front baffle (1.5"), you can change the outer front baffle if you would like but I am unsure as to how the speaker would sound if the drivers are not on the same plane.

The interior dimensions are important, the outer ones not so much. If you want to add more to the outside of the speaker it shouldn't be problematic.

note; all hardwood cabinets tend to have some 'bad' resonance.

What's the purpose of the inner front baffle? Can this piece be omitted?

The double front baffle is to attach the drivers to and to maintain a stable plain. If you use a single piece it has to be solid enough that it will not flex/vibrate and fasteners will not pull free.
