Can 2 track Dolby encoded 5.1 multichannel audio be transcoded to 6 discreet tracks?

I've failed coming up with an answer to this for months. Can anyone tell me if there's any way to transcode the 2 track Dolby encoded 5.1 multichannel audio component in a video file saved by my DVR to a new audio file with 6 discreet tracks?

My DVR/STB can feed the signal of a recording to my old Denon AVR-3310CI via toslink which then decodes the channels and feeds my speakers. But my equally old HTPC only has analog multichannel outputs fed into the AVR's analog inputs it can't decode for 5.1 playback.

I've ripped plenty of DVD's to video files with discreet multichannel tracks that I can play with Potplayer, my most versatile and preferred software media player. But I'd love to transcode files my DVR creates from TV streams to videos that I can play from the HTPC and enjoy full surround sound.

Does anyone know if this is possible?
