My local A/V company just finished wiring the house I'm building. I noticed that they have bundled the speaker cables with the video cables (DVI, component, S-vid) which run to my projector-- and the entire bundle is run through singular holes in the two-by-fours. I was shocked that they didn't separate speaker cables from video interconnects, to avoid interference. But the company claims this is standard installation, and since the lines are all "low voltage" I should not be concerned. Any thoughts?

It would be highly unlikely that you will get any crosstalk between low voltage conductors in this situation so long as you used decent quality cables (quad shield coax, etc.). Don't sweat it.
