I'll more than likely forget something but..

Reciever -> *RCA subwoofer* -> subwoofer
Reciever -> *14AWG spool from home depot or whatever* -> speakers
If you have a dish or digital cable you're gonna need optical or coax and component cables to go from the box to the reciever.. unless your box has HDMI on it. Then that's just another HDMI cord.
You already mention the PS3 and the TV.. that might be it?

Seriously, I have no life.
To be safe for future cabling needs, think about running Cat5e or Cat6 along with the video cables. If there's a chance that you'll want to use a distributed audio system that uses keypads, run Cat5e with the 4 conductor speaker wire and leave a loop in a location that would be a convenient place for a volume control. If this isn't going to happen, don't worry about it. If you have a basement with space for running cables above the ceiling (or if it's exposed joists/unfinished), make sure that whatever hole(s) you drill in the wall/floor are big enough for the wires AND plugs to fit if you need to add something later.
