Wall plates and connectors

I am about to run CL3 wire in the floors to connect the surround speakers. Is it ok to terminate those with wall plates or should I connect directly with the speakers and receivers? I would assume that the wall plates do not change anything if correctly installed.

You assume correctly - the wall plates won't do anything noticeable if you connect everything securely. I use wall plates with five-way binding posts and love them.
