Do you think that one of the infinity 12" subs with say 700 WRMS would have more output than two with 300 WRMS?

If you double power to transducer, you will gain a maximum of 3dB.

If you run a 2nd driver, in phase, playing the same signal, in close proximity to each other, you will gain a maximum of 6dB.

There are a couple of considerations: ) (1) size of your room and (2) difference in specs of the two subs you mentioned. What WmAX said is true if you are just comparing one 300W RMS to two 300W RMSs, but if you compare two different size subs, also compare the specs.

Hwere are the current Infintiy Subs; I compared the specs in a Excel spreadsheet

The main things a larger sub usually has are (1) larger subwoofer speaker diameter, which usually means the ability to go to lower frequencies and(2) more power= louder sound. Size of the speaker and cost, do not necessarily dictate quallity.

Good Luck!
