Three Channel System

I am modifying our existng kitchen/ dining room / living room to be just one big space and I thought it'd be nice to include ceiling speakers. I came up with 2 speakers in each of the former "rooms" and so there will be six speakers. I want to stream music to the speakers and I want to control volume to each fo the sets of speakers (e.g.; if I'm just sitting in what used to be the kitchen I'd just maybe turn the volume down in the other rooms). So it seems like I need three channels, one for each set of two speakers and an amplifier that talks to a bluetooth device so I can stream music to it. I have no requirement for a turntable, CD player, TV. Just want really high quality audio that I can control volume to the different areas and very easy connectivity to a blue tooth device (e.g.; an Alexa or an Iphone).

I'd really appreciate recommendations for amplifier (and/or controller) and speakers.

I have two Sonos speakers (not in ceiling/wall) in different rooms and using the Sonos app on my Samsung tablet I can easily play the same music in different rooms on each and control the volume, stop/start music from either the app or on the device. I'm not familiar with installed speakers so I'd suggest contacting a Sonos dealer.

I concur. My daughter did her entire home with Sonos speakers and deferring zones to suit her taste.
Rather than try to cobble something together, the Sonos system will let you do what you wish within its system design.

Three Sonos Amps with ceiling speakers may be price competitive with other products as well like a Yamaha RX-A6A receiver which has 3 zones with MusicCast built in. Sonos is a good option though for their long term support and reliability.

On a far less expensive side, you could consider a dedicated multi-zone amplifier, used, off eBay, which is designed for this type of work.

Then pair with with three of these, one for each room...

It's about $500 for the amplifier and another $450 for the streaming devices. Call it about $1,000 total, plus speakers.

Please keep in mind, you really don't want to use Bluetooth as that is super distance limited and requires pairing and setting up all the time. With something on WiFi you can just set it up and then jump into the apps to adjust the different zones for playback as you choose.
