Thank you everyone who helped me! I really appreciate the advice. My brain is going to enjoy the stress of this being over. I've spent more than 50 hours in the past week researching this stuff. I hope it works out okay. Hopefully everything will arrive in a week or two.

To please the wife I'm going to have to put up crown molding to hide the speaker wires run along the ceiling. Of course I now have to put up crown molding in the entire family room AND kitchen, but she worth it for putting up with me and this project.

I'll post pictures when I'm done and tell you how it sounds. I know I'm going to need help configuring this monster.
