May anybody kindly point me to a site (or table) where they would list the specifications for A/V cables ? For example, what's the nominal impedance for component cable, composite cable, etc...

75 Ohm is the required nominal impedance for composite and component video, and digital coax. Older audio cables were 50 Ohm, but nowadays manufacturers just make everything 75 Ohm and change the color coding on the RCA connectors.
