So many Dolby Formats...

I just purchased a new Denon AVR 587 receiver and there are so many different audio formats I do not know which to use. I would like to know which format to use for 5.1 surround from (all hooked up via Optical Cable and Analog as well):
1.) Blue ray disks from my PS3 (DTS?)
2.) DVDs from my PS3 (DTS?)
3.) HD Channel Movies from my Comcast HD Box (DTS?)
4.) Regular Channels from my Comcast box (?)
What surround settings to use for 7.1 sound for:
4.) Sporting Events from my HD Box (?)
5.) CD Player connected with analog cables (?)
I have a 5.1 setup that I want to keep and I have the other 2 speakers attached to zone 2 on the receiver that I would like to get to play in my bar room so you can listen to games and music without being in the TV room.

Whichever sounds best!

DTS works (plays) only when formatted as such.

7.1 (which is actually -es or -ex as there is no "7.1"..only 6.1 extended to 7.1) works (plays) only when formatted as such.

The bottom line, I think Dolby will be your default, and use dts, es, or hd/br when your format calls for such. Sometimes, matrix even sounds better than Dolby (particularly in older movies).
