Simple to complex setup changes

I have a pretty low cost setup with just a TV that has 2 hdmi ports, and an hdmi-connected Atmos soundbar (both are supported). I'd like to have the option to connect multiple devices (e.g. Roku, PS, etc.) to take advantage of the sound, but I do not have a good idea of what to use. Any ideas?

Generally the realm of an audio video receiver (avr) and use of traditional components.....something soundbars don't generally accommodate, tho.

You can use an outboard HDMI switcher. If your soundbar is connected to the TV using the HDMI (ARC) connection, then connect a HDMI switcher to the TVs other HDMI input, and connect all your devices to the HDMI switcher.

Then, you can switch between all the devices connected to the HDMI switcher.

You should purchase a switch which is large enough to handle all the different devices you want to connect to it.
For example, this switch is well reviewed, and expands your connectivity from the one remaining HDMI connection to a total of FIVE connections:
