Would the Rotel 1075 (5x120w) do a good job of powering the surrounds and center channel on a home theater based system? I have a chance to pick up one locally for a pretty good deal. I'm wondering if I should jump on it.

For mains I was thinking of keeping an eye out for the 1080 (2x200w)

Yes, as long as your speakers aren't under 4 ohms nominal.

but if it's a good deal :)

i use the same amp to power a 5 channel setup ... but is indeed a better deal than say - two RB1070's which is why i chose it.

also note that the reason these guys are cheaper is because they are being replaced by the 15 series.

My 1075 is doing a fine job powering my 5 channel system including my 4 ohm Dynaudio 140's. No issues whatsoever.
